For the Cake:
-
1 box white or vanilla cake mix (plus ingredients listed on the box: eggs, oil, water)
-
1 package (3 oz) strawberry-flavored gelatin (Jell-O)
-
1 cup boiling water
-
½ cup cold water
For the Topping:
-
1 tub (8 oz) whipped topping (Cool Whip), thawed
-
1 package (3.4 oz) instant vanilla pudding mix
-
1 cup milk
For the Strawberry Crunch Crumble:
-
20 Golden Oreo cookies, crushed
-
3 tablespoons unsalted butter, melted
-
1 package (3 oz) strawberry-flavored gelatin (Jell-O)
Instructions
-
Bake the Cake:
-
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
-
Prepare the cake mix according to the package instructions and bake until a toothpick inserted in the center comes out clean.
-
Let the cake cool for about 10 minutes.
-
-
Make the Poke Holes & Add Jell-O:
-
Using the end of a wooden spoon or a straw, poke holes all over the cake.
-
In a bowl, dissolve the strawberry gelatin in boiling water, then stir in cold water.
-
Pour the Jell-O mixture evenly over the cake, ensuring it seeps into the holes.
-
Refrigerate for at least 1 hour to allow the flavors to absorb.
-
-
Prepare the Topping:
-
In a mixing bowl, whisk the vanilla pudding mix with 1 cup of milk until smooth. Let it sit for 5 minutes to thicken.
-
Fold in the whipped topping and mix until fully combined.
-
Spread the topping evenly over the chilled cake.
-
-
Make the Strawberry Crunch Crumble:
-
In a food processor or zip-top bag, crush the Golden Oreos into crumbs.
-
Mix half of the crumbs with melted butter and strawberry gelatin powder until well combined.
-
Sprinkle the strawberry crunch mixture evenly over the frosted cake.
-
-
Chill & Serve:
-
Refrigerate for at least 30 minutes before slicing.
-
Serve and enjoy!
-
Notes
-
For a richer flavor, use a homemade vanilla cake instead of a box mix.
-
Swap Cool Whip for homemade whipped cream if desired.
-
The cake tastes even better when made a day in advance!
