Description

Strawberry Crunch Poke Cake is a moist and flavorful dessert inspired by the classic strawberry shortcake ice cream bars. A vanilla or strawberry cake is soaked with sweet strawberry gelatin, then topped with creamy whipped topping and a delicious strawberry crunch crumble. Perfect for potlucks, birthdays, and summer gatherings!

Ingredients

Scale

For the Cake:

  • 1 box white or vanilla cake mix (plus ingredients listed on the box: eggs, oil, water)

  • 1 package (3 oz) strawberry-flavored gelatin (Jell-O)

  • 1 cup boiling water

  • ½ cup cold water

For the Topping:

  • 1 tub (8 oz) whipped topping (Cool Whip), thawed

  • 1 package (3.4 oz) instant vanilla pudding mix

  • 1 cup milk

For the Strawberry Crunch Crumble:

  • 20 Golden Oreo cookies, crushed

  • 3 tablespoons unsalted butter, melted

  • 1 package (3 oz) strawberry-flavored gelatin (Jell-O)

Instructions

  • Bake the Cake:

    • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

    • Prepare the cake mix according to the package instructions and bake until a toothpick inserted in the center comes out clean.

    • Let the cake cool for about 10 minutes.

  • Make the Poke Holes & Add Jell-O:

    • Using the end of a wooden spoon or a straw, poke holes all over the cake.

    • In a bowl, dissolve the strawberry gelatin in boiling water, then stir in cold water.

    • Pour the Jell-O mixture evenly over the cake, ensuring it seeps into the holes.

    • Refrigerate for at least 1 hour to allow the flavors to absorb.

  • Prepare the Topping:

    • In a mixing bowl, whisk the vanilla pudding mix with 1 cup of milk until smooth. Let it sit for 5 minutes to thicken.

    • Fold in the whipped topping and mix until fully combined.

    • Spread the topping evenly over the chilled cake.

  • Make the Strawberry Crunch Crumble:

    • In a food processor or zip-top bag, crush the Golden Oreos into crumbs.

    • Mix half of the crumbs with melted butter and strawberry gelatin powder until well combined.

    • Sprinkle the strawberry crunch mixture evenly over the frosted cake.

  • Chill & Serve:

    • Refrigerate for at least 30 minutes before slicing.

    • Serve and enjoy!

Notes

  • For a richer flavor, use a homemade vanilla cake instead of a box mix.

  • Swap Cool Whip for homemade whipped cream if desired.

  • The cake tastes even better when made a day in advance!
