340 g cottage cheese (1 ½ cups)

50 g shaved parmesan (½ cup)

50 g shredded mozzarella cheese (½ cup)

30 g spinach, chopped (1 cup)

Optional garnish: 120 g cottage cheese (½ cup), 2 tbsp chopped fresh basil
Instructions

Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic; sauté for 3-4 minutes until fragrant.

Add ground beef, cook for 4-6 minutes until browned, breaking it apart with a spatula.

Stir in Italian seasoning, salt, pepper, and tomato paste until beef is well coated.

Pour in beef broth, marinara sauce, diced tomatoes with juice, and water. Stir to combine.

Break lasagna noodles in half and add to the pot, ensuring they’re fully submerged.

Cover and bring to a gentle boil. Simmer for 12-15 minutes, stirring occasionally to prevent sticking.
