Description

These no-bake Peanut Butter Oat Cups feature a chewy oat and peanut base, a smooth dark chocolate middle, and a creamy peanut butter topping with mini chocolate chips.


Ingredients

  • 2 cups quick-cooking oats
  • 1/2 cup honey
  • 1/3 cup all-natural creamy peanut butter, for oat layer
  • 1/3 cup chopped peanuts
  • 1 to 2 teaspoons water, optional
  • 6 ounces dark chocolate, chopped
  • 2 teaspoons coconut oil, for chocolate layer
  • 1/2 cup all-natural creamy peanut butter, for topping
  • 1 teaspoon coconut oil, for peanut butter layer
  • 1/4 cup mini chocolate chips

Instructions

  1. Line a metal muffin pan with paper liners, or use a silicone muffin pan without liners.
  2. Add quick-cooking oats, honey, 1/3 cup peanut butter, and chopped peanuts to a bowl. Stir until fully combined.
  3. If the oat mixture feels dry, stir in 1 to 2 teaspoons water.
  4. Scoop about 2 tablespoons of the oat mixture into each muffin cup and press firmly into the bottom.
  5. Add chopped dark chocolate and 2 teaspoons coconut oil to a microwave-safe bowl.
  6. Microwave in 20-second increments, stirring after each increment, until the chocolate melts smoothly.
  7. Spoon about 2 teaspoons melted chocolate over each oat layer. Swirl the pan gently to spread the chocolate.
  8. Place the muffin pan in the freezer for 5 minutes.
  9. Add 1/2 cup peanut butter and 1 teaspoon coconut oil to a separate microwave-safe bowl. Microwave for 15 seconds, then stir until smooth.
  10. Spoon about 2 teaspoons of the peanut butter mixture over each chocolate layer. Swirl the pan gently to even the tops.
  11. Sprinkle mini chocolate chips over each cup.
  12. Freeze the cups for 30 to 60 minutes, or until fully firm.
  13. Remove the oat cups from the pan and store them in a freezer-safe bag or airtight container in the freezer.

Notes

  1. Use quick-cooking oats for the best no-bake texture.
  2. Do not use thick rolled oats unless you pulse them briefly first.
  3. Milk chocolate can replace dark chocolate for a sweeter cup.
  4. Let the cups set fully before removing them from the muffin pan.
  5. Store in the freezer and let a cup sit for a few minutes before eating if you prefer a softer bite.
