Description

A quick and flavorful noodle dinner made with savory ground beef, tender noodles, garlic, ginger, and a rich, slightly sweet Mongolian-style sauce.


Ingredients

  • 8 ounces spaghetti, udon, or rice noodles
  • 1 pound ground beef
  • 2 tablespoons vegetable oil
  • 3 garlic cloves, minced
  • 1-inch piece fresh ginger, minced
  • 1/4 cup soy sauce or tamari
  • 1/4 cup packed brown sugar
  • 1/2 cup beef broth
  • 1 tablespoon hoisin sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 1/2 teaspoon red pepper flakes, optional
  • 1/2 cup chopped green onions
  • 1 tablespoon sesame seeds
  • 2 cups quick-cooking vegetables, optional

Instructions

  1. Bring a large pot of water to a boil. Cook the noodles according to the package directions until just tender. Drain well and set aside.
  2. Stir together the soy sauce, brown sugar, beef broth, hoisin sauce, and red pepper flakes in a small bowl.
  3. Mix the cornstarch with 2 tablespoons cold water in a separate cup until smooth.
  4. Heat the vegetable oil in a large skillet over medium-high heat.
  5. Add the ground beef and cook for 5 to 7 minutes, breaking it into small pieces, until browned. Drain excess fat when needed.
  6. Add the garlic and ginger. Cook for about 1 minute until fragrant.
  7. Pour the prepared soy sauce mixture into the skillet and bring it to a gentle simmer.
  8. Stir the cornstarch slurry again, then add it to the skillet. Cook for 1 to 2 minutes until the sauce becomes glossy and lightly thickened.
  9. Add the cooked noodles and toss until the sauce evenly coats every strand.
  10. Fold in most of the green onions. Remove the skillet from the heat.
  11. Garnish with sesame seeds and the remaining green onions, then serve hot.

Notes

  1. For more heat, add sriracha or extra red pepper flakes.
  2. Use low-sodium soy sauce for greater control over the salt level.
  3. Add broccoli, bell peppers, carrots, mushrooms, or snap peas for extra vegetables.
  4. For a gluten-free version, use rice noodles, gluten-free tamari, and gluten-free hoisin sauce.
  5. Refrigerate leftovers in an airtight container for up to 3 days.
  6. Add a splash of broth or water when reheating to loosen the sauce.
