Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C).

  2. Prepare the Potatoes: Slice the potatoes into thin, even rounds (about 1/8 inch thick).

  3. Make the Sauce: In a saucepan, melt butter over medium heat. Stir in flour and cook for 2-3 minutes to form a paste (roux).

  4. Add Milk: Gradually pour in the milk (or cream), whisking constantly. Continue to cook until the sauce thickens, about 5 minutes.

  5. Season the Sauce: Stir in garlic powder, salt, pepper, and thyme.

  6. Layer the Potatoes: In a greased baking dish, layer half of the potato slices. Pour half of the sauce over them.

  7. Add Cheese (optional): If using, sprinkle half of the cheese between layers. Add the remaining potatoes, sauce, and cheese on top.

  8. Cover and Bake: Cover with aluminum foil and bake for 45 minutes.

  9. Uncover and Brown: After 45 minutes, remove the foil and bake for an additional 15-20 minutes until the top is golden and crispy.

  10. Rest and Serve: Let the potatoes rest for 10 minutes before serving.
