Ingredients
Scale
For the Donuts:
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup buttermilk (or milk + ½ teaspoon vinegar)
- 2 large eggs
- ¼ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- ½ cup fresh raspberries, mashed
For the Raspberry Glaze:
- ½ cup fresh raspberries, mashed and strained (to remove seeds)
- 1 cup powdered sugar
- 1 teaspoon lemon juice
- 1–2 tablespoons milk (as needed for consistency)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick spray.
- Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Combine Wet Ingredients: In a separate bowl, whisk buttermilk, eggs, melted butter, and vanilla extract. Stir in the mashed raspberries.
- Make the Batter: Gradually mix the wet ingredients into the dry ingredients, stirring until just combined. Do not overmix.
- Fill the Donut Pan: Spoon or pipe the batter into the donut molds, filling each about ¾ full.
- Bake: Bake for 12-15 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack.
- Prepare the Glaze: In a small bowl, whisk together the strained raspberry juice, powdered sugar, lemon juice, and milk until smooth.
- Glaze the Donuts: Once the donuts are completely cool, dip them into the glaze or drizzle them over the top. Let the glaze set before serving.
Notes
- If using frozen raspberries, thaw and drain them before mashing.
- Store in an airtight container at room temperature for up to 2 days or refrigerate for longer freshness.
- For extra sweetness, dust with powdered sugar before serving.
