Description

Crispy baked zucchini garlic bites made with Parmesan cheese, herbs, and breadcrumbs. A quick vegetarian appetizer or snack.


Ingredients

Scale
  • 1 cup zucchini, grated
  • 1 clove garlic, grated
  • 1/3 cup breadcrumbs
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 large egg, beaten
  • 2 tablespoons fresh chives, minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Squeeze excess moisture from the grated zucchini using a clean kitchen towel.
  3. Combine zucchini, garlic, breadcrumbs, Parmesan, egg, chives, parsley, salt, and pepper in a bowl.
  4. Mix until evenly combined.
  5. Shape mixture into 16 tablespoon-sized balls.
  6. Arrange on prepared baking sheet.
  7. Bake for 15 to 18 minutes until golden brown.
  8. Serve warm with ranch or marinara sauce.
