Description

A comforting zucchini dessert with warm spices and a buttery oat topping that tastes remarkably similar to apple crisp.


Ingredients

Scale
  • 8 cups zucchini, peeled, deseeded and diced
  • 1/2 cup granulated sugar
  • 1/3 cup lemon juice
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 cup light brown sugar
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup butter

Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
  2. Mix zucchini, granulated sugar, lemon juice, cinnamon, and nutmeg in a large bowl.
  3. Pour mixture into prepared baking dish.
  4. Combine brown sugar, oats, and flour in another bowl.
  5. Cut butter into mixture until coarse crumbs form.
  6. Sprinkle topping evenly over zucchini mixture.
  7. Bake for 45 minutes until bubbly and lightly browned.
  8. Let stand for 10 minutes before serving.

Notes

  1. Approximately 4 to 5 medium zucchini.
  2. Store covered after cooling.
  3. Serve warm with vanilla ice cream if desired.
