- 8 cups zucchini, peeled, deseeded and diced
- 1/2 cup granulated sugar
- 1/3 cup lemon juice
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1 cup light brown sugar
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup butter
Instructions
- Preheat oven to 375°F and grease a 9×13-inch baking dish.
- Mix zucchini, granulated sugar, lemon juice, cinnamon, and nutmeg in a large bowl.
- Pour mixture into prepared baking dish.
- Combine brown sugar, oats, and flour in another bowl.
- Cut butter into mixture until coarse crumbs form.
- Sprinkle topping evenly over zucchini mixture.
- Bake for 45 minutes until bubbly and lightly browned.
- Let stand for 10 minutes before serving.
Notes
- Approximately 4 to 5 medium zucchini.
- Store covered after cooling.
- Serve warm with vanilla ice cream if desired.
