Description

- 3 tablespoons olive oil
- 1/2 cup diced red onion
- 1 teaspoon minced garlic
- 4 medium zucchini, cut into bite-size cubes
- 1 cup frozen corn
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated or shredded Parmesan cheese
- Salt, to taste
- Black pepper, to taste
Instructions
- Heat the oven to 350°F.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the diced red onion and minced garlic. Cook for 5 minutes, stirring often, until the onion becomes tender.
- Add the cubed zucchini and cook for 8 to 10 minutes, stirring occasionally, until lightly browned and tender but not soft.
- Remove the skillet from the heat.
- Stir in the frozen corn, mozzarella, Parmesan, salt, and black pepper.
- Transfer the mixture to a 9-inch square baking dish and spread it evenly.
- Bake uncovered for 15 minutes, until the cheese melts and the vegetables become hot throughout.
- Remove from the oven and serve warm.
Notes
- Replace the frozen corn with kernels cut from 3 fresh ears of corn when desired.
- Cut the zucchini into evenly sized cubes so the pieces cook at the same rate.
- Avoid salting the zucchini before browning because salt can draw out extra moisture.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
