Description

A light and refreshing chicken salad made with fruit, yogurt, and savory seasoning that fits zero point plans.


Ingredients

Scale
  • 2 (12.5 oz) cans white meat chicken, drained and rinsed
  • 8 oz crushed pineapple, drained
  • 2 cups red grapes, halved
  • 2 celery stalks, sliced
  • 1/4 cup diced onion
  • 1 tablespoon Dijon mustard
  • 2 tablespoons light mayonnaise
  • 1 cup non-fat Greek yogurt
  • 1 tablespoon dry ranch seasoning
  • 2 teaspoons lemon pepper seasoning

Instructions

  1. Drain and rinse the canned chicken and place it in a mixing bowl
  2. Drain pineapple completely and add to the bowl
  3. Add grapes, celery, and onion
  4. Check for excess liquid and drain if needed
  5. Add mustard, mayonnaise, yogurt, ranch seasoning, and lemon pepper
  6. Gently fold until combined
  7. Cover and refrigerate for at least 4 hours before serving

  2. Two servings equal one point
