450 g (1 lb) beef stew meat

475 ml (2 cups) beef broth

240 ml (1 cup) red wine

30 g (2 tbsp) tomato paste

1 bay leaf

Instructions

In a large pot over medium heat, brown the beef on all sides.

Add onion and garlic; sauté until soft (3–4 minutes).

Stir in tomato paste, thyme, and bay leaf. Cook for 1 minute.

Pour in red wine, scraping up browned bits.

Add beef broth, carrots, and potatoes. Stir well.

Bring to a boil, then reduce to a simmer.

Simmer uncovered for 90–120 minutes, until beef is tender and stew thickens.
