Description

Elegant summer tart with flaky puff pastry, creamy mascarpone diplomat filling, and delicate white peaches.


Ingredients

  • 1 sheet thawed puff pastry
  • 1 to 2 tablespoons milk
  • 1 cup whole milk
  • 1 teaspoon vanilla bean paste
  • 1/4 cup granulated sugar
  • 1 tablespoon plus 1 1/2 teaspoons cornstarch
  • 1/8 teaspoon salt
  • 2 egg yolks
  • 1 tablespoon unsalted butter
  • 4 ounces mascarpone cheese
  • 1/4 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 cup granulated sugar
  • 1/4 cup Chardonnay
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange blossom honey
  • Juice from 1/2 lemon
  • 1 tablespoon lemon zest
  • 3 firm ripe peaches
  • 2 fresh peaches, sliced
  • 3/4 cup caramel sauce
  • Fresh raspberries
  • Edible flowers for garnish

Instructions

  1. Heat milk and vanilla bean paste until simmering.
  2. Whisk sugar, cornstarch, salt, and egg yolks until smooth.
  3. Slowly whisk warm milk into egg mixture.
  4. Cook mixture over medium heat until thickened.
  5. Whisk in butter, strain, and chill pastry cream.
  6. Simmer sugar, wine, vanilla, honey, lemon juice, lemon zest, and salt.
  7. Poach peach halves until tender and cool in liquid.
  8. Preheat oven to 400 degrees Fahrenheit.
  9. Roll puff pastry into tart pan and trim edges.
  10. Dock pastry, line with parchment, and add pie weights.
  11. Brush edges with milk and bake until golden brown.
  12. Cool tart shell completely.
  13. Whip mascarpone, heavy cream, powdered sugar, and salt until soft peaks form.
  14. Fold pastry cream into mascarpone mixture gently.
  15. Spread filling into cooled tart shell.
  16. Drizzle poaching syrup over filling.
  17. Arrange sliced peaches, raspberries, and edible flowers on top.
  18. Slice and serve chilled or at room temperature.

Notes

  1. Use firm peaches for easier poaching.
  2. Chill pastry cream completely before folding into mascarpone.
  3. Serve tart the same day for the crispiest pastry texture.
