This garlic parmesan chicken and potatoes recipe is a one-pan wonder that brings crispy baked drumsticks and golden roasted potatoes together with bold, herby flavor. Ingredients

1/4 cup olive oil (60 ml)

Juice of 1 lemon

1/4 cup grated Parmesan cheese (25 g)

4 garlic cloves, minced

1 tsp smoked paprika (2 g)

1 tsp dried oregano (1 g)

1 tsp dried thyme (1 g)

1 tsp salt (5 g)

1/2 tsp black pepper (2.5 g)

10 small Yukon Gold potatoes, halved

10 chicken drumsticks
Instructions

In a bowl, whisk together olive oil, lemon juice, Parmesan, garlic, paprika, oregano, thyme, salt, and pepper.

Place halved potatoes in a resealable bag with half of the marinade. Seal and toss to coat.

In a separate bag, add the chicken drumsticks with the remaining marinade. Seal and toss to coat. Let both rest for 15–30 minutes.

Preheat oven to 400°F (200°C). Arrange potatoes on one side and chicken on the other in a large baking dish.

Cover with foil and bake for 45 minutes, or until chicken reaches an internal temperature of 165°F (74°C).

Remove foil and broil for 8–10 minutes until golden and crisp.

Optionally, brush with unused marinade and garnish with parsley or basil. Serve hot.
Notes
Add vegetables like carrots or green beans for variety.
Substitute chicken thighs or breasts with adjusted cook time.
Use fingerling or baby red potatoes if Yukon Golds aren’t available.
