Description

A hearty and comforting Everything Bagel Breakfast Sandwich layered with scallion cream cheese, cheesy folded eggs, crispy bacon, and a drizzle of hot honey. Quick, indulgent, and perfect for busy mornings or a cozy weekend brunch.


Ingredients

  • 4 tbsp (60 g) sliced green onions (about 2 green onions)

  • 4 tbsp (60 g) whipped cream cheese

  • 1 everything bagel, toasted

  • 2 eggs

  • 2 slices American cheese or cheddar (approx. 40 g)

  • 2 slices bacon, cooked and halved

  • 1 tbsp (15 ml) hot honey (or regular honey)


Instructions

  • Mix cream cheese and green onions to make the scallion spread.

  • Toast the everything bagel until golden.

  • Cook eggs in a non-stick skillet, letting them set into a flat sheet.

  • Place cheese slices in the center, fold eggs over into a square.

  • Assemble: bagel bottom + cheesy eggs + bacon + drizzle of hot honey.

  • Spread scallion cream cheese on the top bagel half.

  • Close the sandwich, press gently, and serve hot.

Notes

Use pre-cooked bacon to save time.

Regular honey works if you prefer less spice.

Add a splash of milk for fluffier scrambled eggs.

Try cheddar, pepper jack, or your favorite melty cheese.

Make scallion cream cheese in advance to speed up mornings.
