Roast the sweet potatoes: Preheat oven to 425°F (220°C). Toss cubed sweet potatoes with oil spray, salt, pepper, and cinnamon. Spread on a baking sheet and roast for 30 minutes, flipping halfway through.

Cook the beef: While potatoes roast, brown ground beef in a skillet over medium-high heat. Stir in tomato paste and taco seasoning. Cook for 7–8 minutes until fully done.

Prepare toppings: Slice the avocado.

Assemble: Divide roasted sweet potatoes, cooked ground beef, and cottage cheese into 4 serving bowls.
