Description

Vinegar Coleslaw is a crisp, refreshing no mayo slaw made with cabbage, carrots, and a tangy apple cider vinegar dressing.


Ingredients

  • 1 head green cabbage, finely shredded
  • 1 large carrot, grated
  • 1/2 yellow or red onion, finely sliced
  • 1/3 cup apple cider vinegar
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 1/2 tablespoon Dijon mustard
  • 1 teaspoon celery seed
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Shred the cabbage, grate the carrot, and slice the onion thinly.
  2. Add all vegetables to a large bowl and toss lightly.
  3. In a separate bowl, whisk together vinegar, olive oil, honey, Dijon mustard, celery seed, salt, and pepper.
  4. Pour half the dressing over the vegetables and toss gently.
  5. Gradually add more dressing until desired consistency is reached.
  6. Serve immediately or chill before serving.

Notes

  1. Adjust honey for sweetness preference.
  2. Store in fridge for up to 5 days.
  3. Let sit 15 minutes before serving for better flavor.
