Description

Soft chocolate muffins blended with spinach, carrots, banana, and cocoa for a moist, kid-friendly snack.


Ingredients

Scale
  • 2 large eggs
  • 1 cup mashed overripe banana
  • 1 cup grated carrots
  • 1 cup spinach
  • 1/4 cup oil
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 2 tsp apple cider vinegar
  • 1 cup white whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 cup cocoa powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup chocolate chips

Instructions

  1. Preheat oven to 350°F and line muffin pan
  2. Blend eggs banana carrots spinach oil syrup and vanilla until smooth
  3. Add flour cocoa baking soda baking powder cinnamon and salt
  4. Blend until just combined
  5. Fold in chocolate chips
  6. Divide batter into muffin cups
  7. Bake 20–22 minutes
  8. Cool before serving

Notes

  1. Do not overmix after adding dry ingredients
  2. Use ripe bananas for best sweetness
  3. Store in fridge up to 5 days or freeze up to 1 month
