Description
Soft and fluffy vegan double chocolate muffins with rich cocoa flavor and plenty of chocolate chips. These easy jumbo muffins make a satisfying dairy-free dessert, snack, or lunchbox treat.

- 225 g all-purpose flour
- 60 g unsweetened cocoa powder
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 pinch salt
- 180 ml unsweetened non-dairy milk
- 120 g plain non-dairy yogurt
- 120 ml neutral oil
- 180 g packed light brown sugar
- 1 1/2 teaspoons vinegar
- 1 teaspoon vanilla extract
- 225 g vegan chocolate chips
Instructions
- Preheat the oven to 425°F. Line eight cups of a 12-cup muffin pan with large paper liners.
- Sift the flour, cocoa powder, baking powder, baking soda, and salt into a large bowl.
- Whisk the non-dairy milk, non-dairy yogurt, oil, brown sugar, vinegar, and vanilla in a separate bowl until smooth.
- Pour the wet mixture into the dry mixture and stir gently until no dry streaks remain. Do not overmix.
- Fold in most of the chocolate chips, reserving a small handful for the tops.
- Divide the batter among the eight liners, filling each one almost to the top.
- Scatter the reserved chocolate chips over the batter.
- Bake for 5 minutes at 425°F.
- Without opening the oven door, lower the temperature to 350°F and bake for 18 to 20 minutes.
- Check the centers with a skewer, avoiding melted chocolate chips. Remove the muffins when the skewer comes out clean or with a few moist crumbs.
- Cool the muffins in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
- For the most consistent results, weigh the flour, cocoa powder, yogurt, sugar, and chocolate chips with a digital scale.
- Use room-temperature non-dairy milk and yogurt for smoother mixing.
- Do not overmix the batter because excess mixing can make the muffins tough.
- Store completely cooled muffins in an airtight container at room temperature for up to 3 days.
- Freeze individually wrapped muffins for up to 3 months.
