Description

Soft chocolate Valentine Whoopie Pies with a pink cream cheese filling that are easy to bake and perfect for sharing.


Ingredients

  • Dark chocolate cake mix (15 ounces)
  • Water (1/3 cup)
  • Canola oil (3 tablespoons)
  • Eggs, room temperature (2)
  • Neufchâtel cream cheese, room temperature (8 ounces)
  • Unsalted butter, softened (1/2 cup)
  • Powdered sugar (4 cups)
  • Red food coloring (4–5 drops)

Instructions

  1. Preheat oven to 350°F and prepare a baking sheet.
  2. Mix cake mix, water, oil, and eggs until smooth.
  3. Drop teaspoonfuls of batter onto the baking sheet.
  4. Bake for 9 to 10 minutes until spongy.
  5. Cool cookies completely on a rack.
  6. Beat cream cheese and butter until smooth.
  7. Add powdered sugar gradually and mix well.
  8. Stir in food coloring until evenly pink.
  9. Pipe filling onto one cookie and sandwich with another.

Notes

  1. Do not overbake the cookies.
  2. Cool cookies fully before filling.
  3. Use a piping bag for neat presentation.
