Ingredients
-
2 tbsp (30 ml) olive oil
-
1 medium onion, chopped
-
2 cloves garlic, minced
-
1 large carrot, diced
-
1 celery stalk, diced
-
4 cups (950 ml) vegetable broth
-
1 cup (240 ml) heavy cream
-
1 cup (100 g) grated Parmesan cheese
-
1 tsp (1 g) dried thyme
-
1 tsp (1 g) dried rosemary
-
Salt and pepper, to taste
-
Fresh parsley, for garnish
Instructions
-
Heat olive oil in a large pot over medium heat. Add onion, carrot, celery, and garlic. Sauté for 5–7 minutes until softened and fragrant.
-
Pour in vegetable broth and bring to a simmer.
-
Stir in thyme, rosemary, salt, and pepper. Simmer 15 minutes for flavors to blend.
-
Add heavy cream and Parmesan. Stir until cheese melts and soup becomes creamy.
-
Optional: Blend with an immersion blender for a smoother texture.
-
Serve hot, garnished with parsley and paired with crusty bread.
Notes
Parmesan rind simmered in broth deepens flavor (remove before serving).
For thicker texture, blend half the soup and return to pot.
Add cooked chicken, sausage, or white beans for a heartier meal.
Substitute cream with half-and-half for lighter, or coconut milk for dairy-free.
A drizzle of good olive oil before serving elevates the flavor.
