Baked to golden perfection with plenty of melty cheese, it’s a fast, flexible, and flavor-packed meal that’s ready in under 30 minutes.


Ingredients

  • 1 tbsp oil

  • 1 lb ground beef, cooked and seasoned

  • 1 bag thick tortilla chips (restaurant-style)

  • 1 (15 oz) can red enchilada sauce

  • 1½ cups shredded cheddar cheese (or Monterey Jack)

  • ½ cup black beans (optional)

  • ½ cup corn kernels (optional)

  • ½ small onion, diced (optional)

  • Salt, pepper, and chili powder to taste

  • Optional toppings: sour cream, guacamole, chopped cilantro, salsa


Instructions

  • Preheat oven to 375°F (190°C).

  • In a skillet, cook ground beef with seasonings until browned. Set aside.

  • Lightly grease a baking dish.

  • Layer tortilla chips on the bottom.

  • Add a layer of ground beef, beans, corn, and onions (if using).

  • Spoon enchilada sauce over the layer.

  • Sprinkle shredded cheese generously.

  • Repeat layers until dish is full, ending with sauce and cheese on top.

  • Bake for 20–25 minutes, until cheese is melted and bubbly.

  • Let sit 5–10 minutes before serving.

  • Top with desired garnishes and enjoy!

Notes

Use thick chips to prevent sogginess.
