Description

This tomato cucumber salad is crisp, refreshing, and full of flavor–the perfect light side dish for any occasion!


Ingredients

  • 5 large tomatoes, quartered
  • 1 English cucumber, peeled and sliced
  • 1/2 red onion, sliced
  • 2 tablespoons parsley, chopped
  • 2 tablespoons cilantro, chopped
  • Pinch of salt
  • Pinch of black pepper
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • Pinch of pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon honey (optional)

Instructions

  1. Wash and prepare all vegetables by slicing tomatoes, cucumber, and onion
  2. Chop parsley and cilantro finely
  3. Combine vegetables and herbs in a large bowl and season with salt and pepper
  4. In a separate bowl, whisk olive oil, vinegar, garlic, oregano, salt, pepper, and honey
  5. Pour dressing over vegetables and toss gently
  6. Let salad sit for 1 to 3 hours before serving
  7. Serve fresh and enjoy
