Description
Tiramisu Cookie Cups are an inventive adaptation of the classic Italian dessert, featuring layers of mascarpone cream, coffee-chocolate filling, and a crunchy cookie base.
Ingredients
1 ½ cups crushed chocolate cookies (such as Oreos)
4 tbsp unsalted butter, melted
⅓ cup strong brewed espresso, cooled
1 tbsp coffee liqueur (optional)
⅓ cup semi-sweet chocolate chips
2 tbsp unsalted butter
½ cup heavy cream
1 tbsp cornstarch
1 cup mascarpone cheese, room temperature
½ cup heavy cream, cold
⅓ cup powdered sugar
1 tsp vanilla extract
Unsweetened cocoa powder
Optional: chocolate shavings or mini chocolate chips
Instructions
1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners. Combine the crushed cookies and melted butter. Press into liners and bake 5 minutes.
2. Combine espresso, liqueur, chocolate chips, and butter. Melt until smooth. Whisk heavy cream with cornstarch, add to saucepan, and stir until thickened.
3. Beat mascarpone, sugar, and vanilla until smooth. Whip heavy cream to stiff peaks and fold in.
4. Layer mascarpone and coffee-chocolate mixture, chilling between layers.
5. Dust with cocoa powder and garnish as desired. Chill at least 4 hours.
Notes
For a non-alcoholic version, omit the coffee liqueur.
Adjust espresso strength to taste.
