4 cups (950 ml) beef broth

1 jar (24 oz / 680 g) marinara sauce

1 can (14.5 oz / 411 g) diced tomatoes with juices

1/4 cup (60 ml) water

10 oz (285 g) lasagna noodles, broken in half

1 1/2 cups (340 g) cottage cheese

1/2 cup (50 g) shaved parmesan

1/2 cup (56 g) shredded mozzarella cheese

1 cup (30 g) chopped spinach
Optional Garnish:

1/2 cup (113 g) cottage cheese

2 tbsp (4 g) chopped fresh basil
Instructions

Sauté aromatics:
Heat olive oil in a large pot over medium heat. Add onion and garlic; cook for 3–4 minutes until soft. -
Brown the beef:
Add ground beef and cook 4–6 minutes, crumbling as it browns. -
Season:
Stir in Italian seasoning, salt, pepper, and tomato paste. Cook 1–2 minutes. -
Add liquids:
Pour in beef broth, marinara sauce, diced tomatoes with juices, and water. Stir to combine. -
Add noodles:
Break lasagna noodles and add to the pot. Stir to submerge and simmer covered for 12–15 minutes, stirring occasionally. -
Add cheese and spinach:
When noodles are tender, stir in cottage cheese, parmesan, mozzarella, and spinach. Let cook 2–3 minutes more. -
Garnish and serve:
Ladle into bowls and top with more cottage cheese and basil if desired.
Notes
Stir often while simmering to prevent noodles from sticking.
Ricotta can be used instead of cottage cheese for a creamier finish.
Add red pepper flakes or swap ground beef for sausage for a spicier version.
