Ingredients
For the Oreo Crust:
- 24 Oreo cookies, crushed
- ¼ cup unsalted butter, melted
For the Red Velvet Cheesecake Filling:
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 tsp vanilla extract
- 1 tbsp red food coloring
- 1 tbsp unsweetened cocoa powder

Preheat Oven & Prepare Pan:
- Preheat the oven to 325°F (165°C).
- Grease a 9-inch springform pan and line the bottom with parchment paper for easy removal.

Make the Oreo Crust:
- In a food processor, crush the Oreo cookies until they form fine crumbs.
- Combine the cookie crumbs with the melted butter and stir until well combined.
- Press the mixture firmly into the bottom of the prepared springform pan to form an even crust.
- Bake for 10 minutes and then set aside to cool while you prepare the filling.

Make the Red Velvet Cheesecake Filling:
- In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
- Add the eggs one at a time, beating well after each addition.
- Stir in sour cream, vanilla extract, red food coloring, cocoa powder, flour, and salt. Mix until fully combined.
- Set aside about 1 cup of the batter in a separate bowl (for the swirl).
