Description

The Grilled Cheese Burrito is a cheesy, flavor-packed fusion of a classic burrito and a grilled cheese sandwich. This hearty burrito features a warm tortilla filled with seasoned beef, creamy nacho cheese, crunchy tortilla strips, and rice, then wrapped in an extra layer of crispy melted cheese for a golden, grilled finish. Perfect for satisfying cravings with a bold, cheesy bite!

Ingredients

Scale

For the Burrito Filling:

  • 1 pound ground beef
  • 1 packet (1 oz) taco seasoning
  • ½ cup water
  • 1 cup cooked rice
  • ½ cup nacho cheese sauce
  • ½ cup sour cream
  • ½ cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • ½ cup crunchy tortilla strips (or crushed tortilla chips)

For the Tortilla & Outer Cheese Layer:

  • 4 large flour tortillas
  • 1 cup shredded Mexican blend cheese (for grilling)
  • 2 tablespoons butter or oil (for grilling)

Instructions

  • Prepare the Beef Filling:

    • In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
    • Add taco seasoning and water, stirring well. Simmer for 5 minutes until thickened. Remove from heat.
  • Assemble the Burrito:

    • Lay a flour tortilla flat and spread a spoonful of nacho cheese sauce in the center.
    • Add a scoop of seasoned beef, cooked rice, sour cream, shredded cheese, and crunchy tortilla strips.
    • Fold in the sides and roll the burrito tightly, ensuring all ingredients are enclosed.
  • Grill the Burrito with Cheese:

    • Heat a skillet over medium-low heat and lightly grease with butter or oil.
    • Sprinkle a generous layer of shredded cheese directly onto the pan.
    • Place the burrito seam-side down onto the cheese layer and let it cook for 1-2 minutes until the cheese forms a golden, crispy crust.
    • Flip and repeat on the other side.
  • Serve & Enjoy:

    • Let the burrito cool slightly before slicing. Serve with extra nacho cheese, sour cream, or salsa for dipping.

Notes

  • For extra spice, add diced jalapeños or a drizzle of hot sauce inside the burrito.
  • You can swap ground beef for shredded chicken or black beans for a vegetarian option.
  • If you prefer a crunchier burrito, air-fry or bake it instead of grilling.
