Instructions

  • Prepare the Filling:

    • In a small bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth.
    • Scoop small teaspoon-sized portions onto a parchment-lined tray and freeze for at least 30 minutes.
  • Make the Cookie Dough:

    • In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
    • In a large mixing bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
    • Add the egg, vanilla extract, and almond extract (if using), mixing until well combined.
    • Gradually add the dry ingredients, mixing just until incorporated.
    • Fold in crushed freeze-dried strawberries and white chocolate chips.
  • Assemble the Cookies:

    • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
    • Scoop about 1 ½ tablespoons of dough and flatten it in your palm.
    • Place a frozen cheesecake filling portion in the center, then wrap the dough around it, sealing the edges.
