  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 egg

  • Chopped peanuts

Instructions

Step 1: Prepare the Crust

  1. Preheat oven to 325°F (163°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix chocolate cookie crumbs and melted butter until well combined.
  3. Press the mixture into the bottom of the pan and bake for 8 minutes. Let cool.

Step 2: Make the Cheesecake Filling

  1. In a bowl, beat cream cheese, peanut butter, and sugar until smooth.
  2. Add vanilla extract and egg, mixing until just combined.
  3. Pour the mixture over the cooled crust and spread evenly.

Step 3: Bake & Cool

  1. Bake for 20-22 minutes, until the edges are set and the center is slightly jiggly.
  2. Let cool completely at room temperature, then refrigerate for at least 2 hours.

Step 4: Prepare the Ganache

  1. Heat heavy cream until hot but not boiling.

  3. Spread the ganache over the chilled cheesecake layer and refrigerate for another 30 minutes.
