Instructions

Prepare the Cheesecake Filling:

  1. In a small bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Scoop out ½ teaspoon portions, place them on a parchment-lined plate, and freeze for at least 30 minutes.

Make the Cookie Dough:

  1. In a large mixing bowl, beat butter and sugar until light and fluffy.
  2. Add the egg and vanilla extract and mix until well combined.
  3. In another bowl, whisk together flour, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.

Assemble the Cookies:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Scoop 1 ½ tablespoons of dough and flatten it into a disc.
