Ingredients
-
475 g cooked and shredded chicken (rotisserie or homemade)
-
285 g red enchilada sauce (mild or spicy)
-
200 g shredded Monterey Jack cheese
-
8 flour tortillas
-
15 ml vegetable oil
-
1 small onion, chopped
-
2 garlic cloves, minced
-
1 tsp ground cumin
-
1 tsp chili powder
-
Salt and pepper to taste
-
Fresh cilantro, for garnish
-
Sour cream, for serving
Instructions
-
Preheat and prepare: Set the oven to 190°C (375°F). Lightly grease a baking dish and pour a few tablespoons of enchilada sauce into the bottom to prevent sticking.
-
Sauté aromatics: Heat vegetable oil in a skillet over medium heat. Add onion and garlic; cook for 3–4 minutes until soft and fragrant.
-
Prepare the filling: Add shredded chicken, cumin, chili powder, salt, and pepper. Stir well and cook for 3–5 minutes until heated through.
-
Assemble enchiladas: Place a tortilla flat on a surface. Add a spoonful of the chicken mixture to the center, sprinkle with cheese, then roll tightly. Place seam-side down in the prepared dish.
-
Add sauce and cheese: Pour the remaining enchilada sauce evenly over the rolled tortillas. Top with the remaining cheese.
-
Bake: Cover with foil and bake for 20–25 minutes. Remove foil and bake an additional 5–10 minutes until the cheese is bubbly and golden.
-
Serve: Garnish with fresh cilantro and serve with sour cream.
Notes
Use rotisserie chicken for convenience and juicy flavor.
Warm tortillas before rolling to prevent cracks.
Be generous with the sauce—it keeps the enchiladas moist and flavorful.
Add a squeeze of lime juice before serving for a bright finish.
Can be prepared ahead of time and baked later for easy meal planning.
