Description

Thai lettuce wraps made with ground chicken, crisp vegetables, and a sweet savory Thai-inspired sauce served in fresh lettuce cups.


Ingredients

Scale
  • 3 Tbsp low-sodium soy sauce
  • 2 Tbsp fish sauce
  • 2 1/2 Tbsp brown sugar
  • 2 Tbsp lime juice
  • 1 tsp sesame oil
  • 2 tsp cornstarch
  • 5 green onions
  • 1 Tbsp minced garlic
  • 1 Tbsp minced ginger
  • 1 1/2 lbs lean ground chicken
  • 1 Tbsp olive oil
  • 1 red bell pepper
  • 1 1/2 cups matchstick carrots
  • 1/3 cup chopped cilantro
  • 1/4 cup chopped roasted peanuts
  • Lettuce leaves
  • Hot sauce or peanut sauce

Instructions

  1. Whisk soy sauce, fish sauce, brown sugar, lime juice, sesame oil, and cornstarch in a bowl.
  2. Heat oil in a skillet and cook green onion whites, garlic, and ginger briefly.
  3. Add ground chicken and cook until nearly done.
  4. Stir in bell pepper and cook until slightly tender.
  5. Add carrots and pour in sauce.
  6. Cook until sauce thickens and chicken is cooked through.
  7. Stir in cilantro, green onions, and peanuts.
  8. Serve warm in lettuce leaves with desired toppings.

Notes

  1. Romaine, butter lettuce, or iceberg lettuce all work well for serving.
