Description

Thai Chicken Satay with juicy marinated chicken skewers served with a creamy, savory peanut sauce.


Ingredients

Scale
  • 2 pounds chicken breasts or thighs
  • 3 tablespoons olive oil
  • 1/4 cup coconut milk
  • 1/3 to 1/2 cup smooth peanut butter
  • 1/4 cup low sodium soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon chili paste
  • 1 1/2 tablespoons lime juice
  • 1 1/2 tablespoons fish sauce
  • 1 teaspoon dried basil
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground turmeric

Instructions

  1. Whisk marinade ingredients and reserve one-third cup for sauce
  2. Marinate chicken for at least six hours
  3. Thread chicken onto soaked skewers
  4. Cook by grilling, baking, or pan searing until done
  5. Simmer reserved sauce with coconut milk and peanut butter
