Description
One-pot Teriyaki Noodles made with shredded cabbage, carrots, spaghetti, and a quick homemade teriyaki sauce. A fast vegetarian dinner or an easy side for teriyaki chicken.

- 1/2 green cabbage, shredded
- 2 carrots, shredded
- 1 teaspoon olive oil
- 2/3 cup soy sauce
- 1/2 cup brown sugar
- 1/2 teaspoon ground mustard
- 1 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- 16 ounces spaghetti
- 3 1/2 cups water
- 1 tablespoon sesame seeds
Instructions
- Heat a large pot over medium-high heat. Add olive oil, shredded cabbage, and shredded carrots.
- Saute for about 5 minutes until the vegetables start to soften.
- Add soy sauce, brown sugar, ground mustard, ground ginger, and garlic powder. Stir until combined.
- Add spaghetti to the pot (break in half if desired). Add water and press noodles down to moisten.
- Cook uncovered for 15 to 18 minutes, stirring every few minutes once noodles bend and more often near the end to prevent sticking.
- When noodles are tender and the sauce thickens, remove from heat.
- Toss in sesame seeds. Serve right away and garnish with extra sesame seeds and green onions if desired.
Notes
- Pasta brands absorb liquid differently. If noodles need more time and the pot looks dry, add 1/2 cup water and keep cooking until tender and saucy.
- Substitute shredded napa cabbage for green cabbage if needed.
- To reheat, splash a little water over the noodles before microwaving to keep them from drying out.
