Description
Juicy grilled teriyaki chicken skewers marinated in a homemade sweet and savory sauce, then finished with sesame seeds and green onions.
Ingredients

- 2 lbs chicken thighs or breasts cut into 1 inch cubes
- 2 tablespoons cornstarch
- 1 cup water
- 1/3 cup brown sugar
- 1/3 cup soy sauce low sodium recommended
- 2 cloves garlic minced
- 1 tablespoon rice vinegar
- 1/2 tablespoon fresh ginger minced
- 1 tablespoon honey
- 1/2 teaspoon sesame oil
- 8 skewers
- sesame seeds optional
- chopped green onion optional
Instructions
- Combine cornstarch and water in a small bowl until smooth.
- In a saucepan add brown sugar soy sauce garlic rice vinegar ginger honey sesame oil and the cornstarch mixture then bring to a simmer while stirring.
- Cook until the sauce thickens slightly then remove from heat and let it cool completely.
- Place cubed chicken in a zip top bag and pour half of the cooled sauce over the chicken then marinate in the refrigerator for at least 30 minutes.
- Thread the marinated chicken onto skewers and preheat the grill to medium heat.
- Place skewers on a lightly oiled grill and cook turning every 3 to 4 minutes.
- Grill for about 20 to 30 minutes until the internal temperature reaches 165 degrees.
- During the final turns baste the chicken with the remaining teriyaki sauce.
- Remove from the grill and garnish with sesame seeds and chopped green onions before serving.
Notes
- Use chicken thighs for the juiciest result when grilling.
- Marinate for up to two hours for deeper flavor.
- Cook on a grill pan indoors if an outdoor grill is not available.
