Description

Teriyaki Chicken Rice Bowls with grilled chicken, pineapple, vegetables, and a simple homemade teriyaki sauce.


Ingredients

Scale
  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons low sodium tamari or soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons maple syrup
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup water
  • 1/4 cup tamari or soy sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch
  • 1 small pineapple, peeled and sliced
  • 1 red bell pepper, quartered
  • 1 cup shelled edamame
  • 2 cups cooked brown rice
  • 1 green onion, sliced

Instructions

  1. Marinate the chicken with tamari, vinegar, olive oil, maple syrup, and seasonings for at least one hour.
  2. Simmer sauce ingredients until thickened and glossy.
  3. Grill chicken, pineapple, and pepper until cooked and lightly charred.
  4. Rest and slice chicken, then assemble bowls with rice, vegetables, chicken, and sauce.

Notes

  1. Use tamari for a gluten free option.
  2. Store sauce separately for best texture.
