Description

This Classic Carrot Salad is a sweet, creamy side dish inspired by the beloved Chick-fil-A version. Grated carrots mix with pineapple tidbits and plump raisins in a simple mayo dressing, creating a refreshing and nostalgic slaw that’s perfect for potlucks, picnics, or everyday dinners.

Ingredients

Scale
  • ½ cup (75 g) raisins

  • 1 cup (240 ml) warm water or warm pineapple juice

  • 1 small can (225 g) pineapple tidbits, drained well

  • 1 lb (450 g) carrots, peeled and grated

  • ½ cup (120 ml) mayonnaise

  • 1 tbsp (12 g) granulated sugar

Instructions

  1. Soak raisins in warm water or pineapple juice for 10 minutes. Drain and set aside.

  2. Grate carrots and place them in a medium bowl.

  3. Add mayonnaise and sugar to the carrots and mix until combined.

  4. Fold in the drained raisins and pineapple tidbits.

  5. Cover and refrigerate for at least 30 minutes.

  6. Stir before serving and enjoy cold.

Notes

For tang, add a splash of apple cider vinegar.

A pinch of cinnamon or nutmeg can add warmth.

Swap half the mayo for Greek yogurt for a lighter version.

Best made ahead—flavor improves overnight.
