Description

Sweet potatoes roasted until tender with caramelized honey and mellow garlic, creating a perfectly balanced sweet and savory side dish that works for weeknights or holidays.

Ingredients

Scale
  • 2 1/2 pounds sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons honey
  • 4 cloves garlic, finely minced
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme or rosemary (optional)
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the oven to 400°F and line a large baking sheet with parchment paper.
  2. Spread the sweet potatoes evenly on the prepared baking sheet.
  3. In a small bowl, whisk together honey, olive oil, melted butter, garlic, salt, and black pepper.
  4. Pour the honey garlic mixture over the sweet potatoes and toss until evenly coated.
  5. Roast for 25 minutes, then stir gently to ensure even browning.
  6. Return to the oven and roast for another 15–20 minutes until tender and caramelized.
  7. Optional: broil for 2 minutes for extra browning, watching closely.
  8. Remove from the oven and let rest for a few minutes before serving.

Notes

  1. Cut sweet potatoes evenly for consistent cooking.
  2. Avoid overcrowding the pan to ensure caramelization.
  3. For a vegan version, replace butter with olive oil and honey with maple syrup.
