Description

Easy Sweet Potato Egg Casserole for healthy breakfast meal prep or simple brunch.


Ingredients

3 garlic cloves (minced)

1 lb uncooked turkey sausage

5 cups cubed sweet potatoes (1-inch cubes)

1 green bell pepper (diced)

1/2 large yellow onion (finely diced)

2 tbsp avocado oil

1/2 cup milk

10 large eggs

1/2 cup grated mozzarella cheese

1 tsp salt

1 tsp dried thyme

1/2 tsp pepper


Instructions

1. Preheat oven to 350°F and grease a 9×13 baking dish.

2. Heat oil and sauté sweet potatoes, peppers, and onions for 8-9 minutes.

3. Add garlic and cook briefly.

4. Transfer vegetables to baking dish.

5. Cook turkey sausage until browned and add to vegetables.

6. Whisk eggs, milk, thyme, salt, pepper, and cheese.

7. Pour mixture over vegetables and sausage.

8. Bake 40-45 minutes until center is firm.

9. Cool 15 minutes before slicing.

Notes

Use dairy-free cheese if preferred.

Add mushrooms or spinach for a vegetarian version.

Cut sweet potatoes evenly for consistent cooking.
