- Rice for serving
Instructions
- Place chicken in the bottom of the crockpot.
- Whisk pineapple juice, brown sugar, soy sauce, and garlic, then pour over the chicken.
- Add bell peppers if using.
- Cook on low for 4–6 hours or on high for 2–3 hours.
- Optional: Mix cornstarch with water and stir in 30 minutes before serving to thicken.
- Serve the chicken and sauce over rice.
