Ingredients

  • 2 medium red apples, chopped (about 300 g)

  • 1 large English cucumber, chopped (about 300 g)

  • 1 Tbsp fresh lemon juice (15 ml)

  • 1 Tbsp apple cider vinegar (15 ml)

  • 1 tsp honey or maple syrup/agave (5 ml)

  • Salt and freshly ground black pepper, to taste


Instructions

  1. Chop apples and cucumber into bite-sized pieces. Leave skins on for extra texture.

  2. In a small bowl, whisk lemon juice, apple cider vinegar, and honey or maple syrup until smooth.

  3. Pour dressing over chopped apples and cucumber in a mixing bowl.

  4. Add salt and pepper. Gently toss to coat evenly.

  5. Serve immediately or refrigerate for 15–30 minutes before serving.

Notes

Use crisp, sweet apples like Gala or Honeycrisp.

Pat cucumber dry for less watery salad.

Add red pepper flakes for a little heat.

Great chilled, especially on hot days.
