Ingredients

  • 1/4 cup plus 2 tablespoons sugar, divided
  • 3 tablespoons cold butter
  • 2 tablespoons buttermilk
  • 1 egg

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Place cherries in a heavy-bottom saucepan.
  3. Whisk water and cornstarch together until smooth and pour over cherries.
  4. Add sugar and cook over medium heat until the filling thickens.
  5. Stir in lemon juice and keep the filling warm.
  6. Mix flour, baking powder, and 1/4 cup sugar in a bowl.
  7. Cut in the cold butter until crumbly.
  8. Whisk egg and buttermilk together and stir into the flour mixture until a soft dough forms.
  9. Pour the cherry filling into a 2 1/2-quart baking dish.
  10. Drop spoonfuls of dough evenly over the cherries.
  11. Sprinkle remaining sugar over the topping.
  12. Bake for 20 to 25 minutes until golden brown and bubbly.
  13. Serve warm or chilled.
