  • 115 g (4 oz) cream cheese, softened

  • 120 g (½ cup) Kewpie mayonnaise, plus extra for topping

  • 30 ml (2 tbsp) sriracha, plus extra for topping

  • 800 g (4 cups) cooked sushi rice

  • 15 ml (1 tbsp) rice vinegar

  • 24 g (3 tbsp) furikake seasoning, divided

  • 2 green onions, sliced

  • Nori sheets, for serving

Notes

Use short-grain or sushi rice for the best sticky texture.

If Kewpie mayo isn’t available, substitute regular mayo with a splash of rice vinegar and a pinch of sugar.

Adjust sriracha to taste—mild for kids, spicy for adults.

Cut nori into squares for easy scooping at the table.

Assemble ahead: cover and refrigerate for up to 24 hours before baking, adding 5–10 extra minutes bake time.
