Description

This festive sugar cookie cheesecake has a buttery sugar cookie crust, creamy cheesecake filling with cookie dough balls, and a glossy white chocolate ganache topping.


Ingredients

  • 1 3/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, room temperature
  • 1 cup cane sugar
  • 1 tsp vanilla extract
  • 1 large egg, room temperature
  • 1 egg yolk, room temperature
  • 1/3 cup Christmas sprinkles
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, room temperature
  • 1 cup cane sugar
  • 1 tsp vanilla extract
  • 5 TBSP milk
  • 1/3 cup Christmas sprinkles
  • 32 oz cream cheese, room temperature
  • 2/3 cup cane sugar
  • 3/4 cup sour cream or Greek yogurt, room temperature
  • 1/2 cup heavy cream, room temperature
  • 1 tsp vanilla extract
  • 4 large eggs, room temperature
  • 2/3 cookie dough balls
  • 1 cup white chocolate chips
  • 1/3 cup heavy cream

Instructions

  1. Preheat oven to 350°F. Prepare 9-inch springform pan with parchment and nonstick spray.
  2. Mix flour, baking soda, and salt for crust.
  3. Beat butter and sugar for 2 minutes, then add vanilla, egg, and egg yolk.
  4. Mix in dry ingredients and sprinkles. Press dough into pan and bake 25–30 minutes.
  5. For cookie dough balls, mix flour and salt. Beat butter, sugar, vanilla, and milk. Add dry mix and sprinkles. Roll into small balls and freeze.
  6. Preheat oven to 325°F for cheesecake. Beat cream cheese and sugar until smooth.
  7. Add sour cream, heavy cream, and vanilla; mix until creamy.
  8. Add eggs and fold in cookie dough balls.
  9. Pour batter over crust. Bake in water bath for 80–90 minutes until edges set.
  10. Cool 30 minutes with oven door cracked, then chill 6 hours or overnight.
  11. For ganache, heat cream and pour over white chocolate chips. Stir smooth.
  12. Top cheesecake with ganache, remaining cookie dough balls, and sprinkles.
