- 1/3 cup cotija cheese
- 1 lime, juiced
- 2 cloves garlic, minced

- 1/2 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- Fresh cilantro for garnish (optional)
Instructions
- Layer the chicken in the bottom of the slow cooker.
- Top with corn, cream cheese, cotija cheese, lime juice, garlic, and spices without stirring.
- Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until the chicken shreds easily.
- Shred the chicken directly in the slow cooker and stir until creamy.
- Adjust consistency with a splash of milk or broth if needed and garnish with cilantro before serving.
Notes
- Chicken thighs create a richer flavor while breasts keep it lighter.
- Drain canned corn well to avoid excess liquid.
- Add extra lime juice or chipotle chili powder for more bold flavor.
