Description

Creamy slow cooker street corn chicken made with tender chicken, sweet corn, lime juice, and cheese for an easy Mexican-inspired comfort dinner.


Ingredients

  • 1 lb boneless chicken breasts or thighs
  • 2 cups corn (fresh, frozen, or canned and drained)
  • 4 oz cream cheese
  • 1/3 cup cotija cheese
  • 1 lime, juiced
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • Fresh cilantro for garnish (optional)

Instructions

  1. Layer the chicken in the bottom of the slow cooker.
  2. Top with corn, cream cheese, cotija cheese, lime juice, garlic, and spices without stirring.
  3. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until the chicken shreds easily.
  4. Shred the chicken directly in the slow cooker and stir until creamy.
  5. Adjust consistency with a splash of milk or broth if needed and garnish with cilantro before serving.

Notes

  1. Chicken thighs create a richer flavor while breasts keep it lighter.
  2. Drain canned corn well to avoid excess liquid.
  3. Add extra lime juice or chipotle chili powder for more bold flavor.
