Description

Street Corn Chicken Bowl is a vibrant, flavor-packed dinner that combines tender spiced chicken, smoky grilled corn, creamy cotija, and fresh avocado over fluffy rice. Inspired by Mexican street food, it delivers the perfect mix of comfort, spice, and freshness — a wholesome and satisfying meal ready in under an hour.


Ingredients

  • 2 chicken breasts, cut into cubes

  • 2 tbsp olive oil

  • 1 tsp chili powder

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt and black pepper, to taste

  • 2 ears of corn (or 1½ cups kernels), grilled or roasted

  • 2 tbsp mayonnaise

  • 2 tbsp sour cream

  • 1/3 cup cotija cheese (or feta), crumbled

  • Juice of 1 lime

  • 2 tbsp chopped cilantro

  • 2 cups cooked white rice

  • 1 cup black beans, rinsed and drained

  • 1 avocado, sliced or diced

  • Hot sauce and lime wedges, for serving


Instructions

  1. Prepare the Chicken: Toss chicken cubes in olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Cook in a skillet over medium heat for 8–10 minutes, until golden and fully cooked.

  2. Cook the Corn: Grill or roast the corn until slightly charred. Cut off the kernels and mix with mayonnaise, sour cream, cotija, lime juice, cilantro, and a sprinkle of chili powder.

  3. Make the Rice: Cook rice according to package directions, then fluff and season lightly with salt or butter.

  4. Assemble the Bowl: Layer rice at the base, then top with chicken, street corn mixture, black beans, and avocado.

  5. Garnish and Serve: Add a drizzle of hot sauce, fresh lime juice, and extra cotija cheese. Serve warm or at room temperature.

Notes

Use feta or Parmesan if cotija isn’t available.

Swap rice for brown rice, quinoa, or cauliflower rice for a lighter option.

Store components separately in airtight containers for up to 4 days.

Add diced jalapeños or chipotle mayo for a spicier version.
