Description

A fresh 15-minute Strawberry Spinach Salad made with baby spinach, strawberries, blueberries, feta cheese, toasted pecans, and a sweet balsamic glaze.


Ingredients

Scale
  • 1 cup balsamic vinegar
  • 1/4 cup honey or brown sugar
  • 10 oz baby spinach fresh
  • 3 cups strawberries cleaned and hulled sliced
  • 1 cup blueberries
  • 1/3 cup feta cheese crumbled
  • 1 cup pecans toasted some chopped

Instructions

  1. Heat balsamic vinegar and honey in a small saucepan over medium heat
  2. Bring to a gentle boil then reduce heat and simmer while stirring until the mixture thickens and reduces by half about 10 minutes
  3. Remove from heat and allow the balsamic glaze to cool
  4. In a large bowl combine baby spinach strawberries blueberries and feta cheese
  5. Toss gently to combine the ingredients
  6. Divide the salad into serving bowls
  7. Top with toasted pecans both whole and chopped
  8. Drizzle balsamic glaze over each bowl before serving

Notes

  1. Use fresh ripe strawberries for the best flavor
  2. Add the balsamic glaze just before serving to keep spinach crisp
  3. Lightly toast pecans to bring out their nutty flavor
  4. Store dressing separately if making ahead
