Description

Delightfully sweet and easy-to-make shortbread cookies with vibrant strawberry flavor and a simple glaze.


Ingredients

Scale
  • 1 ounce freeze-dried strawberries
  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar for glaze
  • 2 tablespoons milk for glaze

Instructions

  1. Cream together softened butter and powdered sugar until light and fluffy. Beat in vanilla extract.
  2. Gradually add flour and mix on low speed until just combined.
  3. Crush freeze-dried strawberries into a fine powder and fold into dough.
  4. Shape dough into a log or roll to 1/2-inch thickness and cut shapes. Chill if using log method.
  5. Preheat oven to 325°F. Bake 18–22 minutes until edges are lightly golden.
  6. Cool on baking sheet 5 minutes, then transfer to wire rack.
  7. Whisk glaze ingredients until smooth.
  8. Drizzle or dip cooled cookies in glaze and allow to set.

Notes

  1. Avoid overmixing to maintain tender texture.
  2. Chill dough before baking to prevent spreading.
  3. Store in airtight container up to five days.
