Description
This strawberry ricotta bruschetta is a light and flavorful appetizer with creamy ricotta, juicy strawberries, fresh basil, and balsamic glaze on crisp toasted bread. It is perfect for parties, brunch, date nights, and romantic gatherings.
Ingredients
Scale
- 1 French baguette, sliced into 1/2-inch thick rounds
- 1 tablespoon olive oil
- 1 cup whole milk ricotta cheese
- 1 cup fresh strawberries, chopped
- 1 tablespoon honey, optional
- Salt and black pepper, to taste
- Fresh basil leaves, finely sliced
- Balsamic glaze, to drizzle on top
Instructions
- Preheat the oven to 400°F. Arrange the baguette slices on a baking sheet in a single layer and brush the tops with olive oil.
- Bake for 6 to 8 minutes, or until the bread turns golden and crisp. Let the slices cool slightly.
- In a small bowl, stir the ricotta with salt, black pepper, and honey, if using, until smooth and creamy.
- Wash, dry, hull, and chop the strawberries into small pieces.
- Spread the ricotta mixture onto each toasted baguette slice.
- Spoon chopped strawberries over the ricotta and drizzle lightly with balsamic glaze.
- Top with fresh basil and serve immediately.
Notes
- Toast the bread and mix the ricotta ahead of time, but assemble the bruschetta just before serving.
- Use ripe strawberries for the sweetest, juiciest flavor.
- Try whipped ricotta for an extra creamy texture.
- Add crushed pistachios, toasted almonds, or lemon zest for extra flavor and crunch.
- Store components separately to prevent soggy toast.
