Description
Soft and chewy, strawberry cake mix cookies are easy to make with only 3 ingredients. A fun pink treat for Valentine’s Day or sweet occasions!

- 15.25 ounce box strawberry cake mix
- ½ scant cup vegetable oil or 7 TB melted butter
- 2 large eggs
- white chocolate melting wafers (optional)
- Heart sprinkles (optional)
Instructions
- Preheat oven to 350°F. Line a baking sheet with a silicone mat or parchment paper.
- Combine the cake mix, oil and eggs in a large bowl. Stir together until combined. Refrigerate dough 15–20 minutes if desired.
- Scoop the dough onto the prepared baking mat.
- Bake for 9–11 minutes or until the cookies are set without browning.
- Cool on the pan for a couple minutes, then transfer to a cooling rack.
- Melt chocolate if desired and dip half the cookie. Add sprinkles.
Notes
- Mix in 1/4–1/2 cup chopped freeze dried strawberries for more flavor.
- Use a 15.25 ounce cake mix for best results.
- Mix in 1/2 cup white chocolate chips as a variation.
- Roll dough balls into granulated sugar for added sweetness.
- Store at room temp up to 1 week or freeze up to 2 months.
