Description

Soft and chewy, strawberry cake mix cookies are easy to make with only 3 ingredients. A fun pink treat for Valentine’s Day or sweet occasions!


Ingredients

Scale
  • 15.25 ounce box strawberry cake mix
  • ½ scant cup vegetable oil or 7 TB melted butter
  • 2 large eggs
  • white chocolate melting wafers (optional)
  • Heart sprinkles (optional)

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with a silicone mat or parchment paper.
  2. Combine the cake mix, oil and eggs in a large bowl. Stir together until combined. Refrigerate dough 15–20 minutes if desired.
  3. Scoop the dough onto the prepared baking mat.
  4. Bake for 9–11 minutes or until the cookies are set without browning.
  5. Cool on the pan for a couple minutes, then transfer to a cooling rack.
  6. Melt chocolate if desired and dip half the cookie. Add sprinkles.

Notes

  1. Mix in 1/4–1/2 cup chopped freeze dried strawberries for more flavor.
  2. Use a 15.25 ounce cake mix for best results.
  3. Mix in 1/2 cup white chocolate chips as a variation.
  4. Roll dough balls into granulated sugar for added sweetness.
  5. Store at room temp up to 1 week or freeze up to 2 months.
